There's an old-fashioned independent drug store in one of the high-income neighborhoods here in Charlotte (I forget the name). But they have a grill in the place and you can even buy sandwiches there. The best sandwiches in Charlotte. Maybe the best sandwiches anywhere. They do serve a pimento cheese sandwich, but I haven't had it yet.
If it's a grill-house, then what about a grilled pimento cheese sandwich? A slice of tomato and some onion on toasted grilled bread...mmmmm.

I never liked pimento cheese sandwiches BUT what you describe actually sounds like something that I might like. I'm going to have to give it a try.
Isn't pimento cheese just a southerner's way of ruining a perfectly good tomato sandwhich?
